Kentucky Derby pie!
Ingredients:
1 9-inch unbaked pie crust
1 cup granulated sugar
1/2 cup all-purpose flour
1/2 cup unsalted butter, melted
2 large eggs, beaten
2 tablespoons bourbon (optional)
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup chocolate chips
Whipped cream or vanilla ice cream for serving (optional)
Instructions:
Preheat your oven to 350°F (175°C).
Place the unbaked pie crust into a 9-inch pie dish and set aside.
In a mixing bowl, combine the sugar and flour.
Add the melted butter, beaten eggs, bourbon (if using), and vanilla extract to the sugar and flour mixture. Stir until well combined.
Fold in the chopped pecans and chocolate chips.
Pour the mixture into the prepared pie crust.
Place the pie in the preheated oven and bake for about 50-60 minutes, or until the top is golden brown and the filling is set. You can test the doneness by inserting a toothpick into the center of the pie. If it comes out clean, the pie is done.
Once baked, remove the pie from the oven and let it cool completely before serving.
Serve slices of the Kentucky Derby pie with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
Enjoy your homemade Kentucky Derby pie!
Note: The bourbon in this recipe is optional. If you prefer not to use alcohol, you can omit it or substitute it with 1-2 teaspoons of vanilla extract.
